If anyone else has had a problem trying to get home sharing working between a Mac Mini and an iPad - make sure the Mini is connected to copper, not wireless.
I have no idea why, but when both the iPad and Mini were on wireless - even on the same wireless network - I constantly got an error message when trying to activate sharing on the iPad.
Once I disabled wireless and connected the Mini to the network with a cable, everything started working.
